For me, the Fall season signifies cooler weather. Colder temperatures are perfect for comfort food. One of my favorite comfort foods is chili.
The recipe I am about to share is my absolute favorite chili recipe. If you know me, you know I am not a cook by any means. In fact, this recipe is my husband’s special recipe. It is award-winning, as it won 1st place when my sister brought it to work for a chili contest.

Shane's Special Chili
The perfect chili recipe for a cold day.
- 2 lbs Lean Hamburger
- 4 Garlic Cloves Finely Chopped
- 1/2 tsp Garlic Powder
- 1 cup Finely Chopped Onions
- 8 oz Hunts Tomato Sauce
- 16 oz Diced Tomatoes
- 1 cup Water
- 1 can Beer (8-12oz) optional
- 4 tbsp Chili Powder
- 2 tbsp Beef Bouillon (6 cubes)
- 2 tbsp Ground Cumin
- 2 tsp Paprika
- 2 tsp Oregano
- 3 tbsp Sugar
- 1 tsp Ground Coriander
- 1 tsp Unsweetened Cocoa or other Chocolate optional
- 1 tsp Louisiana Hot Sauce
- 1 Bell Pepper Finely Chopped
- 2 cans Chili Beans (16 oz each)
- 1 tsp Cornmeal
- 1 tsp Flour
- 1 bag Fritos
- 1 bag Shredded Cheese
Gather all ingredients. Chop up garlic cloves, onions, and bell pepper.
Brown the hamburger in a large saucepan. Drain.
Add all the ingredients (except the chili beans, flour, and cornmeal) to a big pot.
Bring to a boil, then reduce heat and simmer 2 hours. Stir often.
Add flour, cornmeal, and chili beans. Stir in after you are done simmering.
Ready to eat. Serve with Fritos and shredded cheese to make Frito Chili pie.
Recipe NotesFeel free to double this recipe to assure you have plenty of leftovers for the week. I recommend making this chili on a cold Saturday, when you have plenty of time inside.
